My favorite gourmet mushroom! Hericium erinaceus is an edible mushroom that belongs to the tooth fungus group. It is native all over the world in North America, Europe, and Asia. They appear on hardwoods yearly from August to November and mostly show up on dead trees, but can also survive on live ones as well. It can fruit on the same dead tree for 20 years and hypothesized that it can survive in ideal conditions for 40!

Lion’s Mane is excellent brain food! Improves memory, focus, alertness, concentration and emotional balance. Can be sauteed in pan to make steak or nuggets, marinated for alternative "pulled pork" sandwiches, made into "crab" cakes or dehydrated and powdered to make capsules for on the go supplementation.
