Pleurtus eryngii, also known as king trumpet, french horn, and king oyster mushroom is an edible mushroom native to the Mediterranean regions of Europe, the Middle East, and North Africa. It is the largest of the Pleurotus genus. Unlike other species of oyster mushrooms, which are wood-decay primarily, the King Oyster mushroom are also weak parasites on the root systems of plants. It has a long shelf life, does not smell when raw, and has a umami flavor and meaty texture when cooked. King Oysters may have agents that stimulate the immune system and could function as a cholesterol-lowering dietary device. Spores are 7-9.5 µm x 3.5-4.5 µm in size
